Story behind the dish

Masala chai is an ancient Indian tradition of spiced tea with milk that is served in every corner of the subcontinent. The West adopted it as a chai latte in coffee shops since the 90s. Today it balances aromatic spices and comfort in homemade and commercial versions alike.

Preparation

Spiced chai latte is an Indian preparation with easy difficulty. Reserve about 20 minutes in total (10 for mise en place and preparation, 10 for cooking). Follow the 7 phases in order: each step indicates what to do, what to observe and, when applicable, the time or level of fire.
