Story behind the dish

Cloud coffee is a Korean variant that replaces the dalgona cream with egg white meringue for an even lighter texture. It went viral on Instagram for its appearance as a floating cloud on ice milk. It represents the homemade creativity of Seoul's cafe culture.

Preparation

Cloud coffee is a South Korean preparation with easy difficulty. Reserve about 12 minutes in total (12 for mise en place and preparation, 0 for cooking). Follow the 7 phases in order: each step indicates what to do, what to observe and, when applicable, the time or level of fire.
