Story behind the dish

Horiatiki, peasant salad, is the authentic Greek salad without lettuce that is a success in taverns throughout Greece. It was born as a summer dish using what the Mediterranean garden gave. The block feta and Kalamata olives are non-negotiable in the traditional version.

Preparation

Traditional horiatiki salad is a Greek preparation with easy difficulty. Reserve for about 15 minutes in total (15 for mise en place and preparation, 0 for cooking). Follow the 7 phases in order: each step indicates what to do, what to observe and, when applicable, the time or level of fire.
