Story behind the dish

Thai iced tea or cha yen is a Thai street drink served in markets with a bag and straw since the mid-20th century. Its orange colour and intense sweetness come from Ceylon tea mixed with spices and condensed milk. It is Thailand's gastronomic icon exported all over the world.

Preparation

Thai iced tea is a preparation from Thailand with easy difficulty. Reserve about 15 minutes in total (10 for mise en place and preparation, 5 for cooking). Follow the 7 phases in order: each step indicates what to do, what to observe and, when applicable, the time or level of fire.

Before you start

  • Have ready: 3 tablespoons of Thai tea mix or black tea with spices.
  • Have ready: 400 ml of boiling water.
  • Have ready: 4 tablespoons of condensed milk.
  • Have ready: 2 tablespoons of sugar.
  • Have ready: 100 ml of evaporated milk.
  • Salt, oil and spices measured and within reach.
  • Clean utensils, board and clear work surface.
  1. Infuse Thai tea with cardamom

Infuse Thai tea with cardamom, anise, cinnamon and cloves in boiling water for 5 minutes. When it comes to a boil, adjust the heat to maintain a constant bubbling, not an uncontrolled boil.
