Rice pudding is a homemade Spanish dessert with Arab roots spread throughout the peninsula since the Middle Ages. Each region adds its touch: cinnamon in Castilla, lemon in Andalusia or raisins in Galicia. It is grandmothers' comfort food and traditional cafeteria dessert.
