Story behind the dish

Horiatiki, peasant salad, is the authentic Greek salad without lettuce that is a success in taverns throughout Greece. It was born as a summer dish using what the Mediterranean garden gave. The block feta and Kalamata olives are non-negotiable in the traditional version.

Preparation

Traditional horiatiki salad is a Greek preparation with easy difficulty. Reserve for about 15 minutes in total (15 for mise en place and preparation, 0 for cooking). Follow the 7 phases in order: each step indicates what to do, what to observe and, when applicable, the time or level of fire.

Before you start

  • Have ready: 4 ripe tomatoes, sliced.
  • Have ready: 1 thick cucumber, sliced.
  • Have ready: 1 green pepper in rings.
  • Have ready: 1 red onion, finely julienned.
  • Have ready: 200 g of block feta cheese.
  • Salt, oil and spices measured and within reach.
  • Clean utensils, board and clear work surface.
  1. cut tomatoes

cucumber and pepper in large pieces and place in salad bowl

  2. Add julienned red onion and mix gently

  3. Place the entire block of feta on top without crumbling it

  4. Distribute Kalamata olives around

  5. Dress with oil

vinegar, oregano, salt and pepper just before serving

Taste before serving: the balance between salt, acidity and fat defines the final result

  6. Do not stir excessively: each diner mixes on his own plate

  7. Serve with rustic bread to moisten the dressing juices

Variations

  • Vegan dairy-free version using plant-based cheese or cream alternatives.
